    Fox Creek Wines

    Fox Creek Wines was born when a small group of doctors and their wives decided to realise a lifelong passion - creating wine from bare earth and sunshine. The earth was found at McLaren Vale, one of South Australia's premier wine regions, renowned worldwide for its Shiraz.

    As they believe wine is made principally in the vineyard, great attention is given to caring for the vines. Many of the vineyards are trellised to expose the grapes to sunshine and free movement of air which reduces susceptibility to disease. The premium wines are sourced entirely from grapes grown in the McLaren Vale region and most of them from our own vineyards.

    Leader of the pack and the first wine made at Fox Creek was the 1994 Shiraz, which won the trophy for the best wine at the McLaren Vale Wine Show in 1995. Fox Creek has subsequently won this award in 1998 and 2003. Subsequent vintages of this wine, now called the Reserve Shiraz, have achieved international acclaim. Fox Creek's success continues with many wines recognised with trophies and medals from both national and international shows. The range of wines made by Fox Creek has gradually increased to fourteen.

    Appears bright cherry red with a darker plum coloured core. The nose shows licorice and dark fruits, toasty oak with a chocolatey rum & raisin aroma. The entry to the palate is soft with a rich solid palate that is typically McLaren Vale, with blackcurrant and stewed plum flavours. The structure is typical of Fox Creek showing ripe fruit tannin with integrated oak complexity.

    A bright wine with a red rim and a darker plum coloured core. Spicy red cherry and dark cherry combination with a smoky character derived from 15 months in oak. There are also hints of caramel from barrel maturation and pepper from the Shiraz component in the wine. As a young wine, the entry to the palate is soft yet fresh. In the mouth the wine expands to give a range of flavours from cherry and dark berries to a spice-like quality. The tannins are firm, but soft enough so as to complement the fruit weight. The wine has a sweet middle palate, but finishes dry.

    Strong bright rim with a mid-deep red core.

    The hints of blackcurrant and blackberry are typical characters of this variety. Typically McLaren Vale produces a dark, spicy chocolate character in Cabernet and this is evident. However, this wine has fascinating aromas of mint, leather and dark cherries. The oak shows when the wine is first poured, but with a little time in the glass yields to give a subtle cinnamon, char and cherry combination.

    As a young wine, the palate is a little tight. The cherry and chocolate come through as does a blackberry fruit character. The tannin and acidity are firm, but balanced for a wine that will drink well when young, preferably with food. It will develop further complexity with cellaring.

    Very deep red/back with crimson edges. The nose offers multiple levels of complexity with sweet blackberry, chocolate, licorice and vanilla evident complemented by savoury well-balanced oak.

     

    Very rich powerful entry of blackberry with savoury spice, licorice and dark chocolate filling out the mid palate, leading to a long finish balanced by well integrated tannin structure of great depth.

    Vibrant rim with an intense dark plum core. The nose of this wine is powerful and aromatic. It has a suggestion of a rich intense wine with plenty of blackberry fruit. The oak shows as a sweet, lifted character and has an enticing effect in combination with the powerful fruit aroma. This wine is a typical McLaren Vale Shiraz. With a strong central core of black fruit, there is a sweetness that only comes from a region such as this. The fruit is well balanced by firm yet very soft tannins and the finish is dry and lengthy, with acidity to carry the wine through a few years in the bottle.

    Very deep red with vibrant ruby rim. Powerful aromatics of blackberry, licorice and all spice. The subtle lifted vanilla from barrel fermentation adds complexity. Typical of our best parcels of McLaren Vale Shiraz, showing strong vibrant black fruit with richness that is achieved only in a region such as this. The depth and intensity of the palate is well balanced by a firm tannin structure. The finish shows great length and has supporting acid sufficient to allow for mid term cellaring.     Deep red central core with vibrant purple rim. Showing typical McLaren Vale Cabernet aromas of spicy blackberry and chocolate together with mint and dark cherries complexed by lifted oak char and cinnamon. Intense black fruits and cherries are supported by firm acidity and enveloping tannin structure giving great balance to the depth.

    Vibrant deep red black with intense violet rim. Powerful lifted complex fruit aromas of cassis, tobacco leaf and subtle spicy oak. Intensely fresh cassis and blackberry flavours with cinnamon and licorice complexity. The fruit weight is balanced by enveloping firm tannin structure and the finish has great length.

    Deep red core with lighter crimson edges. Ripe dark berry fruit complexity with cinnamon and savoury characters together with hints of chocolate and licorice. Earthy, dark berries with savoury and chocolate flavours typical of our Merlot. Soft ripe fruit fills the palate balanced by supporting oak and acidity giving great length of flavour together with sufficient tannin structure to ensure medium term cellaring potential.

The nose on this wine displays a mixture of blackberry allspice, raspberry chocolate and licorice with vanilla spice oak characters complementing the fruit perfectly. Powerful blackberries and blackcurrant flavours together with licorice and dark chocolate. These flavours are balanced by firm acidity and fully integrated tannin giving a wine of extraordinary depth and length of finish. This is the epitome of our Reserve Shiraz style.

    Intense vibrant purple, black colour. Lifted complex aromas of berry, cherry, blackcurrant fruit, chocolate and mocha with subtle integrated oak complexity of vanilla and cigar box. The palate has lashings of fruitcake, rum & raison and chocolate. The structure is very rich, thick and concentrated with a well integrated full palate and ripe complex fruit.
